| Our reputation is based upon the modern interpretation of traditional dishes, concentrating upon the superb local ingredients. In addition, we try to source our fish as sustainably as possible, and do not use endangered wild species. As a result some of our fish is now farmed from sustainable sources. These include Icelandic cod, Norwegian halibut and Shetland organic salmon and sea trout. We ensure that wherever possible the wild fish we do use is either line or pot caught. |
